Dublin coddle is a hearty stew with bacon, pork sausage, onions, and potatoes.
The ingredients for this meal couldn't have been easier to find. We got potatoes, onions, and stock at our regular grocery store. The bacon and bangers (pork sausage) came from a butcher. Don't, uh, have much more to say about that. Super easy!

To start, I began by slicing the potatoes, onions, and bacon. Then, in my trusty cast iron Dutch oven, I poured in the stock and brought it to a boil. Once bubbling, I submerged the whole sausage and bacon into the pot, letting them simmer with the lid on for 5 minutes. After the bacon and sausage were partially cooked, I removed them along with the stock from the pot. Slicing up the sausage, I started the layering process: a third of the potatoes went in first, followed by half of the onions, then half of the bacon and sausage. I added another layer and then topped it off with the remaining potatoes. I did a sprinkle of salt and pepper between each layer for flavor. I poured the stock over it all and then covered the pot. Finally, I reduced the heat and let the coddle simmer for an hour. Once it was done, I ladled it into a bowl and served it with a crusty, buttered bread.
I was worried the *tiny* ingredient list would mean the coddle would be bland. I am so glad I was wrong. Most of the flavor came from the onions and the bacon, and everything came together beautifully. I made a point to get high quality ingredients, so the flavors of each really shined.
I thought the texture was soft and silky because of the well done potato layers. I asked Mason to describe the texture and he said, "Mushy."
Either way, I loved it.
Mason was unconvinced-- He said it was tasty, but that it "didn't have a lot of flavor" and the "sausage wasn't very good, but the bacon was good. Too much onion."
This simple, hearty meal is one of the best things I've made so far. I think, anyway.
Side note: We watched the movie "Wolfwalkers" while we ate the coddle, and I highly recommend it. It's based on Irish folklore and explores themes like colonialism, nature, and family.
I would say 4.9/5 and Mason says 3.9/5.
