Lohikeitto is a creamy, Finnish salmon soup that is traditionally eaten on cold nights.
For maybe the first time in my life, I don't have much to say. We chose this meal because we had salmon in the freezer we needed to use before it went bad. Mason and I went to our regular grocery store in the morning, and we easily found all the ingredients we needed. We grabbed: seafood stock, heavy cream, leeks, potatoes, carrots, and fresh dill. We already had butter, salmon, and salt/pepper in the fridge.

This was seriously the easiest international meal I've made so far. I chopped and cleaned the leek and then sauteed it in butter until it was wilted. Afterwards, I added the seafood stock, sliced carrot, and cubed potatoes. Those boiled until they were fork tender. In the meantime, I measured the heavy cream and sliced the salmon into large chunks. Side note, I actually used salmon with skin-on because I was afraid skinless would break up in the soup. Then, once the veggies were done, I added the cream and salmon. I brought everything to a deliciously creamy simmer, and then let it cook for about 6 minutes. That's it! We topped it with a toss of sea salt, freshly cracked pepper, and then sprinkled on a smidge of fresh dill.
I seriously think I heard angels singing when I took my first bite. Okay, maybe it wasn't that dramatic, but it was darn good. I wasn't sure what a salmon soup would be like, so there was some trepidation; fortunately, I was extremely happy with it. The predominant flavor of the liquid was cream with a hint of seafood. It was a chunky chowder, and most of it was vegetable and fish with a little bit of liquid. The salmon was perfectly cooked and easily flaked apart with a spoon. It was not overly fishy or salty. I asked Mason what he thought the dill added to it, and he said, "A dill flavor." Take his word for it. It added another layer of flavor to the deceptively simple, yet wonderfully complex, creamy dish.
I would say 4.5/5 and Mason says 4.25/5.
